Main Ingredients
- 1 cup Cooked Beetroot
- 1 cup Cooked Chickpeas
- 2 tablespoon Tahini
- 2 tablespoon Olive Oil
- 1 clove Garlic minced
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Cumin ground
- to taste Salt
- to taste Pepper
1. In a food processor, combine the beetroot, chickpeas, tahini, olive oil, garlic, lemon juice, and cumin.
2. Process until smooth, scraping down the sides as needed.
3. Season with salt and pepper to taste.
4. Serve with a drizzle of olive oil and a sprinkle of goat cheese, if desired.
