Ingredients 

Granola

  • 2 cups rolled oats
  • 0.5 cup almonds, chopped
  • 0.5 cup walnuts, chopped
  • 0.25 cup maple syrup
  • 0.25 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon salt

Parfait

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 cups vegan yogurt

Instructions 

  1. Preheat oven to 325°F (165°C).
  2. In a large bowl, mix oats, almonds, walnuts, cinnamon, and salt.
  3. In a small bowl, combine maple syrup, coconut oil, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and mix well.
  5. Spread mixture evenly on a baking sheet.
  6. Bake for 20 minutes, stirring halfway through.
  7. Let granola cool completely.
  8. In serving glasses, layer vegan yogurt, granola, and mixed berries.
  9. Serve immediately or refrigerate for later.
