Berry and Nut Granola Parfait

Granola
- 2 cups rolled oats
- 0.5 cup almonds, chopped
- 0.5 cup walnuts, chopped
- 0.25 cup maple syrup
- 0.25 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 0.5 teaspoon cinnamon
- 0.25 teaspoon salt
Parfait
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 cups vegan yogurt
Preheat oven to 325°F (165°C).
In a large bowl, mix oats, almonds, walnuts, cinnamon, and salt.
In a small bowl, combine maple syrup, coconut oil, and vanilla extract.
Pour wet ingredients into dry ingredients and mix well.
Spread mixture evenly on a baking sheet.
Bake for 20 minutes, stirring halfway through.
Let granola cool completely.
In serving glasses, layer vegan yogurt, granola, and mixed berries.
Serve immediately or refrigerate for later.
