  • 1 cup mixed berries fresh or frozen
  • ½ cup maple syrup
  • ¼ cup coconut oil melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine oats, baking powder, and salt.
  3. In another bowl, mix maple syrup, melted coconut oil, and vanilla extract.
  4. Combine wet and dry ingredients. Fold in the berries.
  5. Spread the mixture evenly in the baking dish.
  6. Bake for 30 minutes or until golden brown. Let cool before cutting into bars.
