Ingredients

  • 1 cup aquafaba liquid from a can of chickpeas
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon cornstarch
  • 2 cups mixed berries strawberries, blueberries, raspberries
  • 1 tablespoon powdered sugar for dusting

Instructions 

  1. Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whip the aquafaba until it forms stiff peaks.
  3. Gradually add the sugar, one tablespoon at a time, while continuing to whip.
  4. Add the vanilla extract, white vinegar, and cornstarch, and whip until glossy.
  5. Spoon the mixture onto the prepared baking sheet, shaping it into a circle with a slight dip in the center.
  6. Bake for 1 hour and 30 minutes, then turn off the oven and let the pavlova cool completely inside the oven.
  7. Once cooled, top with mixed berries and dust with powdered sugar before serving.
