Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Vegetable Broth
  • 1 cup Chopped Kale
  • 1 cup Chopped Butternut Squash peeled
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground

Instructions 

  1. 1. In a saucepan, bring the vegetable broth to a boil.
  2. 2. Add the quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. 3. In a mixing bowl, toss the butternut squash with olive oil, salt, and pepper.
  4. 4. Spread the squash on a baking sheet and roast at 400°F (200°C) for 20 minutes.
  5. 5. Once the quinoa is cooked, fluff with a fork and mix in the chopped kale.
  6. 6. Add the roasted butternut squash to the quinoa and kale mixture.
  7. 7. Serve warm and enjoy!
