  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 1 small red onion diced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 1 tablespoon lime juice freshly squeezed
  • 2 tablespoon cilantro chopped

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add diced red onion and red bell pepper. Sauté until softened, about 5 minutes.
  3. 3. Add minced garlic, ground cumin, and chili powder. Cook for another minute.
  4. 4. Stir in black beans and corn. Cook until heated through, about 5 minutes.
  5. 5. Season with salt and pepper to taste. Remove from heat.
  6. 6. Stir in lime juice and chopped cilantro before serving.
