Ingredients 

Main Ingredients

  • 1 can Black beans drained and rinsed
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Vegan cheese shredded
  • 4 large Tortillas
  • 1 tablespoon Olive oil

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add black beans and corn to the skillet. Cook for 3-4 minutes.
  3. Place one tortilla in the skillet. Sprinkle half with vegan cheese, then add the bean and corn mixture. Top with more cheese and fold the tortilla over.
  4. Cook until the bottom is golden brown, then flip and cook the other side. Repeat with remaining tortillas.
  5. Cut into wedges and serve warm.
