Black Bean Sweet Potato Chili
A hearty and delicious vegan chili made with black beans and sweet potatoes.

- 1 tablespoon Olive Oil
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 Red Bell Pepper, diced
- 1 medium Sweet Potato, peeled and diced
- 1 can Black Beans, drained and rinsed
- 1 can Diced Tomatoes
- 2 cups Vegetable Broth
- 1 tablespoon Chili Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 Avocado, sliced (for garnish) optional
- 1 Cilantro, chopped (for garnish) optional
Heat olive oil in a large pot over medium heat.
Add the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the diced red bell pepper and sweet potato. Cook for about 5 minutes, stirring occasionally.
Add the black beans, diced tomatoes, vegetable broth, chili powder, cumin, paprika, salt, and black pepper. Stir to combine.
Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the sweet potatoes are tender.
Serve hot, garnished with sliced avocado and chopped cilantro if desired.
