Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can black beans, drained and rinsed 15 oz
  • 1 can diced tomatoes 14.5 oz
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • ¼ cup fresh cilantro, chopped optional

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add carrot, celery, bell pepper, and zucchini. Cook until vegetables are tender.
  4. Stir in black beans, diced tomatoes, vegetable broth, cumin, and chili powder.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving, if desired.
