Ingredients 

Main Ingredients

  • 1 cup Rice uncooked
  • 1 can Black Beans drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 cups Vegetable Broth
  • 1 Lime juiced
  • ¼ cup Cilantro chopped

Instructions 

  1. 1. Cook the rice according to package instructions.
  2. 2. In a pan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  3. 3. Add the minced garlic, cumin, salt, and black pepper. Cook for another minute.
  4. 4. Add the black beans and vegetable broth. Simmer for 10-15 minutes.
  5. 5. Mix in the cooked rice, lime juice, and chopped cilantro. Serve warm.
