Instructions
Rinse the black rice under cold water.
In a pot, combine the black rice, water, and salt. Bring to a boil.
Reduce heat, cover, and simmer for about 30 minutes or until rice is tender.
Let the rice cool completely.
In a bowl, mix coconut yogurt, maple syrup, and vanilla extract.
In serving glasses, layer the black rice, coconut yogurt mixture, and diced mangoes.
Garnish with fresh mint leaves.
