Ingredients

  • 1 cup black rice
  • 2 cups water
  • ¼ teaspoon salt
  • 2 ripe mangoes, diced
  • 1 cup coconut yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Fresh mint leaves for garnish

Instructions 

  1. Rinse the black rice under cold water.
  2. In a pot, combine the black rice, water, and salt. Bring to a boil.
  3. Reduce heat, cover, and simmer for about 30 minutes or until rice is tender.
  4. Let the rice cool completely.
  5. In a bowl, mix coconut yogurt, maple syrup, and vanilla extract.
  6. In serving glasses, layer the black rice, coconut yogurt mixture, and diced mangoes.
  7. Garnish with fresh mint leaves.
