- 1 cup black beans, cooked and drained
- 1 cup quinoa, cooked
- ½ cup corn kernels
- ½ cup diced tomatoes
- ¼ cup chopped cilantro
- ¼ cup diced red onion
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
In a large bowl, combine black beans, quinoa, corn, tomatoes, cilantro, and red onion.
In a small bowl, whisk together olive oil, cumin, paprika, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Serve immediately or refrigerate for later.
