Ingredients 

Main Ingredients

  • 1 cup All-purpose flour
  • 1 cup Cornmeal
  • ½ cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • ½ cup Coconut oil, solid
  • ¾ cup Almond milk
  • 1 teaspoon Vanilla extract
  • 1 cup Blackberries fresh or frozen

Instructions 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, cornmeal, sugar, baking powder, and salt.
  3. Cut in the solid coconut oil until the mixture resembles coarse crumbs.
  4. Stir in the almond milk and vanilla extract until just combined. Gently fold in the blackberries.
  5. Drop large spoonfuls of dough onto the prepared baking sheet.
  6. Bake for 18-20 minutes, or until golden brown. Let cool slightly before serving.
