Ingredients 

Main Ingredients

  • 2 cups blackberries
  • 1 cup raw cashews (soaked overnight)
  • ½ cup coconut cream
  • ¼ cup maple syrup
  • ¼ cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 ½ cups graham cracker crumbs
  • ¼ cup melted coconut oil

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs and melted coconut oil. Press into a springform pan to form the crust.
  3. Blend soaked cashews, coconut cream, maple syrup, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Pour the mixture over the crust.
  5. Bake for 60 minutes. Let it cool, then refrigerate for at least 4 hours.
  6. Top with blackberries before serving.
