Main Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup coconut oil, melted
- 1 cup sugar
- 2 ripe bananas, mashed
- ¼ cup almond milk
- 1 teaspoon vanilla extract
- 1 cup blueberries
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a bowl, mix flour, baking soda, and salt.
In another bowl, mix melted coconut oil and sugar. Add mashed bananas, almond milk, and vanilla extract.
Combine wet and dry ingredients. Fold in blueberries.
Pour batter into the loaf pan. Bake for 50 minutes or until a toothpick comes out clean.
Let cool before slicing.
