- 1 cup Cornmeal
- 1 cup All-purpose flour
- ½ cup Sugar
- 1 tablespoon Baking powder
- ½ teaspoon Salt
- 1 cup Almond milk
- ¼ cup Vegetable oil
- 1 cup Blueberries fresh or frozen
Preheat your oven to 375°F (190°C). Grease a baking pan.
In a mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
Add the almond milk and vegetable oil to the dry ingredients. Stir until just combined.
Gently fold in the blueberries.
Pour the batter into the prepared baking pan and spread it out evenly.
Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool before slicing and serving.
