Blueberry Galette
A simple and delicious vegan blueberry galette.

Dough
- 1 ¼ cups all-purpose flour
 - ½ cup vegan butter cold and cubed
 - ¼ cup ice water
 
Filling
- 2 cups blueberries fresh or frozen
 - ¼ cup sugar
 - 1 tablespoon cornstarch
 - 1 teaspoon lemon juice
 
 
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine flour and vegan butter. Use your fingers to mix until the mixture resembles coarse crumbs.
Add ice water, one tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
In another bowl, mix blueberries, sugar, cornstarch, and lemon juice. Set aside.
Roll out the dough on a floured surface into a 12-inch circle. Transfer to the prepared baking sheet.
Place the blueberry mixture in the center of the dough, leaving a 2-inch border. Fold the edges over the filling.
Bake for 40 minutes or until the crust is golden and the filling is bubbly. Let cool before serving.
