Ingredients

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup coconut oil, solid
  • ¾ cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Cut in the solid coconut oil using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Stir in the almond milk and vanilla extract until just combined. Do not overmix.
  5. Gently fold in the blueberries.
  6. Drop large spoonfuls of dough onto the prepared baking sheet.
  7. Bake for 20 minutes or until golden brown. Let cool slightly before serving.
