Ingredients 

Pancake Ingredients

  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1 tablespoon Sugar
  • ¼ teaspoon Salt
  • 1 cup Almond milk
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh blueberries

Instructions 

  1. In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In another bowl, mix the almond milk and apple cider vinegar. Let it sit for a few minutes to curdle.
  3. Add the vanilla extract to the wet mixture. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Gently fold in the blueberries.
  5. Heat a non-stick pan over medium heat. Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
