  • 2 cups rolled oats
  • 1 cup walnuts, chopped
  • 1 cup dried blueberries
  • ½ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions 

  1. Preheat your oven to 325°F (165°C).
  2. In a large mixing bowl, combine the oats, walnuts, and salt.
  3. In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and mix until everything is well coated.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown.
  7. Remove from the oven and let it cool completely. Stir in the dried blueberries.
  8. Store in an airtight container for up to two weeks.
