Instructions
Heat the olive oil in a wok over medium heat.
Add the minced garlic and stir-fry for about 30 seconds until fragrant.
Add the carrots and bell peppers, and stir-fry for 3-4 minutes.
Add the chopped bok choy and soy sauce, and cook for another 3-4 minutes until the vegetables are tender.
Stir in the cornstarch mixture and cook for another minute until the sauce thickens.
Serve hot.
