Main Ingredients
- 2 tablespoon Olive Oil
- 1 large Onion, finely chopped
- 2 cloves Garlic, minced
- 2 medium Carrots, diced
- 2 stalks Celery, diced
- 1 cup Lentils, cooked
- 1 can Tomatoes, crushed
- 2 tablespoon Tomato Paste
- 1 cup Vegetable Broth
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- to taste Salt and Pepper
Heat olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent.
Add the minced garlic and cook for another minute.
Add the diced carrots and celery, cook until they start to soften.
Stir in the cooked lentils, crushed tomatoes, and tomato paste.
Pour in the vegetable broth and add the dried oregano and basil.
Season with salt and pepper to taste.
Bring to a boil, then reduce heat and simmer for 30-45 minutes.
