Instructions
1. Heat the olive oil in a large pan over medium heat.
2. Add the chopped bell peppers and cook until softened, about 5 minutes.
3. Stir in the chopped tomatoes and cook for another 5 minutes.
4. Add the Bomba rice, vegetable broth, paprika, and salt. Stir well.
5. Bring to a boil, then reduce the heat to low. Cover and simmer for 20 minutes.
6. Stir in the frozen peas and cook for an additional 5 minutes.
7. Remove from heat and let it sit for 5 minutes before serving.
