Ingredients 

Pie Crust

  • 1 Vegan pie crust

Filling

  • 1 cup Maple syrup
  • ½ cup Brown sugar
  • ¼ cup Coconut oil, melted
  • ¼ cup Bourbon
  • 2 tablespoon Cornstarch
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Salt
  • 1 ½ cups Pecans, roughly chopped

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine maple syrup, brown sugar, melted coconut oil, bourbon, cornstarch, vanilla extract, and salt. Mix well.
  3. Add the chopped pecans to the mixture and stir until evenly coated.
  4. Pour the filling into the prepared vegan pie crust.
  5. Bake in the preheated oven for 50 minutes, or until the filling is set and the crust is golden brown.
  6. Allow the pie to cool completely before serving.
