Main Ingredients
- 1 cup Quinoa
- 1 cup Chickpeas cooked
- 1 cup Mixed Vegetables chopped
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Pepper
1. Cook the quinoa according to package instructions.
2. In a pan, heat olive oil over medium heat. Add mixed vegetables and cook until tender.
3. Add cooked chickpeas to the pan and stir well.
4. Season with salt and pepper.
5. Serve the cooked quinoa in bowls, topped with the vegetable and chickpea mixture.
