Ingredients

  • 2 cups Diced Potatoes
  • 1 cup Chopped Bell Peppers
  • 1 cup Chopped Onions
  • 1 cup Spinach
  • 1 cup Cherry Tomatoes halved
  • 1 cup Vegan Cheese shredded
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine diced potatoes, bell peppers, onions, spinach, cherry tomatoes, and olive oil. Mix well.
  3. Season with salt and black pepper. Toss to coat evenly.
  4. Transfer the mixture to a baking dish and spread it out evenly.
  5. Bake in the preheated oven for 35-40 minutes, or until the potatoes are tender and golden brown.
  6. Sprinkle the shredded vegan cheese on top and bake for an additional 5 minutes, or until the cheese is melted.
  7. Remove from the oven and let it cool for a few minutes before serving.
