Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 can black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and bell pepper, cook until softened.
  3. Stir in garlic, cook for another minute.
  4. Add cherry tomatoes, black beans, cumin, and paprika. Cook until heated through.
  5. Season with salt and pepper.
  6. Garnish with fresh cilantro before serving.
