Ingredients

  • 4 Bell Peppers tops cut off and seeds removed
  • 1 cup Quinoa cooked
  • 1 cup Black Beans rinsed and drained
  • 1 cup Corn cooked
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 tablespoon Olive Oil

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked quinoa, black beans, corn, cumin, paprika, and salt.
  3. Stuff the bell peppers with the quinoa mixture.
  4. Place the stuffed peppers in a baking dish and drizzle with olive oil.
  5. Bake for 30 minutes or until the peppers are tender.
  6. Serve warm and enjoy!
