Main Ingredients
- 2 large Zucchinis sliced
- 2 large Eggplants sliced
- 4 medium Potatoes peeled and sliced
- 2 large Tomatoes sliced
- 1 large Onion sliced
- 4 cloves Garlic minced
- ½ cup Olive Oil
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Dried Oregano
- ½ cup Water
Preheat your oven to 375°F (190°C).
In a large baking dish, combine all the sliced vegetables.
Add the minced garlic, olive oil, salt, pepper, and oregano. Mix well to coat the vegetables evenly.
Pour the water into the baking dish.
Bake in the preheated oven for about 1 hour, or until the vegetables are tender and slightly browned.
Stir the vegetables halfway through the cooking time to ensure even baking.
Remove from the oven and let it cool slightly before serving.
