Ingredients 

Main Ingredients

  • 2 cups Broccoli florets
  • 1 cup Raw cashews soaked in water for at least 4 hours
  • 2 tablespoons Nutritional yeast
  • 2 cloves Garlic minced
  • 1 cup Unsweetened almond milk
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 tablespoon Olive oil

Instructions 

  1. 1. Cook the broccoli florets in a pot of boiling water for about 5 minutes, until tender. Drain and set aside.
  2. 2. In a blender, combine the soaked cashews, nutritional yeast, minced garlic, almond milk, lemon juice, salt, and black pepper. Blend until smooth and creamy.
  3. 3. In a saucepan, heat the olive oil over medium heat. Pour in the blended sauce and cook for about 5 minutes, stirring frequently, until heated through and slightly thickened.
  4. 4. Add the cooked broccoli to the sauce and stir to combine. Serve hot over your favorite pasta.
