Salad Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 0.5 cup red onion, diced
  • 0.5 cup cherry tomatoes, halved
  • 0.25 cup sunflower seeds
  • 0.25 cup raisins
  • 0.25 cup vegan mayonnaise
  • 1 tablespoon apple cider vinegar
  • to taste Salt and pepper

Instructions 

  1. In a large bowl, combine broccoli, cauliflower, red onion, cherry tomatoes, sunflower seeds, and raisins.
  2. In a small bowl, whisk together vegan mayonnaise, apple cider vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Chill in the refrigerator for at least 30 minutes before serving.
