Broccoli Cheddar Mac & Cheese
A delicious vegan twist on the classic mac and cheese with broccoli and vegan cheddar.

Main Ingredients
- 1 lb elbow macaroni
- 1 head broccoli, chopped
- 2 cups shredded vegan cheddar cheese
- 1 cup unsweetened almond milk
- ¼ cup nutritional yeast
- 2 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Cook macaroni according to package instructions. Drain and set aside.
Steam broccoli until tender.
In a large pot, heat olive oil over medium heat. Add garlic and sauté until fragrant.
Add almond milk and nutritional yeast. Stir until combined.
Add vegan cheddar cheese and stir until melted and smooth.
Add cooked macaroni and broccoli to the pot. Stir until well coated.
Season with salt and pepper to taste.
