Ingredients 

Main Ingredients

  • 2 cups broccoli florets
  • 2 cups pasta any kind
  • 1 cup vegan cheddar cheese shredded
  • 1 cup unsweetened almond milk
  • 2 tablespoon nutritional yeast
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions. Drain and set aside.
  3. Steam broccoli until tender, about 5 minutes.
  4. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  5. Add almond milk, nutritional yeast, salt, and pepper. Stir to combine.
  6. Add vegan cheddar cheese and stir until melted.
  7. Combine pasta, broccoli, and cheese sauce in a baking dish.
  8. Bake for 20 minutes or until bubbly and golden on top.
