Ingredients 

Main Ingredients

  • 1 head Broccoli chopped
  • 1 cup Carrots chopped
  • 1 cup Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Nutritional Yeast
  • 1 cup Coconut Milk full-fat
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. In a large pot, sauté the onions and garlic until translucent.
  2. 2. Add the chopped broccoli and carrots. Cook for about 5 minutes.
  3. 3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. 4. Add the nutritional yeast and coconut milk. Stir well.
  5. 5. Use a blender to puree the soup until smooth. Return to pot.
  6. 6. Season with salt and black pepper to taste. Serve hot.
