Broccoli Cheddar Stuffed Potatoes

Ingredients 

Main Ingredients

  • 4 large russet potatoes
  • 2 cups broccoli florets chopped
  • 1 cup vegan cheddar cheese shredded
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt or to taste
  • 0.5 teaspoon black pepper or to taste

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes. Pierce them with a fork a few times.
  3. Place the potatoes on a baking sheet and bake for 45 minutes, or until tender.
  4. While the potatoes are baking, steam the broccoli florets until tender.
  5. Once the potatoes are done, let them cool slightly. Cut them in half and scoop out most of the flesh into a mixing bowl.
  6. In the mixing bowl, combine the potato flesh, steamed broccoli, vegan cheddar cheese, olive oil, garlic powder, onion powder, salt, and pepper. Mix well.
  7. Stuff the potato skins with the mixture and place them back on the baking sheet.
  8. Bake for an additional 10-15 minutes, or until the tops are golden and the cheese is melted.
  9. Serve hot and enjoy!
