Broccoli Cranberry Slaw

- 4 cups broccoli florets, chopped
- ½ cup dried cranberries
- ¼ cup red onion, finely chopped
- ½ cup shredded carrots
- ¼ cup sunflower seeds
- ½ cup vegan mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon maple syrup
- Salt and pepper to taste
In a large bowl, combine broccoli, cranberries, red onion, carrots, and sunflower seeds.
In a small bowl, whisk together vegan mayonnaise, apple cider vinegar, and maple syrup.
Pour dressing over the broccoli mixture and toss to coat.
Season with salt and pepper to taste.
Chill in the refrigerator for at least 30 minutes before serving.
