Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Broccoli florets chopped
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red onion finely chopped
  • ¼ cup Olive oil
  • 2 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper freshly ground

Instructions 

  1. 1. Cook quinoa according to package instructions. Let it cool.
  2. 2. Steam broccoli florets until tender, about 5 minutes. Let them cool.
  3. 3. In a large mixing bowl, combine cooked quinoa, broccoli, cherry tomatoes, cucumber, and red onion.
  4. 4. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Serve immediately or refrigerate for later.
