Main Ingredients
- 4 cups shredded broccoli
- 1 cup shredded carrots
- 0.5 cup sliced almonds
- 0.25 cup dried cranberries
- 0.25 cup vegan mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon maple syrup
- Salt and pepper to taste
In a large bowl, combine shredded broccoli, shredded carrots, sliced almonds, and dried cranberries.
In a small bowl, whisk together vegan mayonnaise, apple cider vinegar, and maple syrup.
Pour the dressing over the broccoli mixture and toss to coat.
Season with salt and pepper to taste.
Chill in the refrigerator for at least 30 minutes before serving.
