Instructions
1. Heat the olive oil in a pot over medium heat.
2. Add the chopped onion and cook until translucent.
3. Add the minced garlic, cumin, and paprika. Cook for another minute.
4. Add the rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil.
5. Reduce heat and simmer for about 30-35 minutes, or until lentils are tender.
6. Season with salt and pepper to taste. Serve warm.
