Brown Rice Salad Recipe
A healthy and delicious vegan brown rice salad.

Main Ingredients
- 1 cup Brown Rice uncooked
- 2 cups Water
- 1 cup Cherry Tomatoes halved
- 1 cup Cucumber diced
- 1 cup Bell Pepper diced
- ¼ cup Red Onion finely chopped
- 2 tablespoons Olive Oil
- 2 tablespoons Lemon Juice freshly squeezed
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper freshly ground
1. Rinse the brown rice under cold water.
2. In a pot, bring water to a boil. Add the rice, reduce heat, cover, and simmer for 45 minutes or until rice is tender.
3. Drain any excess water and let the rice cool.
4. In a large mixing bowl, combine the cooled rice, cherry tomatoes, cucumber, bell pepper, and red onion.
5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
6. Pour the dressing over the salad and toss to combine.
7. Serve immediately or refrigerate for later.
