Ingredients 

Main Ingredients

  • 1 cup Brown Rice uncooked
  • 2 cups Water
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Bell Pepper diced
  • ¼ cup Red Onion finely chopped
  • 2 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Rinse the brown rice under cold water.
  2. 2. In a pot, bring water to a boil. Add the rice, reduce heat, cover, and simmer for 45 minutes or until rice is tender.
  3. 3. Drain any excess water and let the rice cool.
  4. 4. In a large mixing bowl, combine the cooled rice, cherry tomatoes, cucumber, bell pepper, and red onion.
  5. 5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Serve immediately or refrigerate for later.
