  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Paprika
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine chickpeas, olive oil, salt, and paprika. Spread on a baking sheet.
  3. Roast in the oven for 20-25 minutes until crispy.
  4. Arrange cherry tomatoes and cucumber slices on a serving platter.
  5. Add the roasted chickpeas to the platter and serve.
