Main Ingredients
- 2 cups diced tomatoes
- 1 cup corn kernels
- 1 cup lima beans
- 1 cup diced potatoes
- 1 cup chopped onions
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
1. Heat the olive oil in a large pot over medium heat.
2. Add the onions and garlic, and sauté until softened.
3. Add the diced tomatoes, corn, lima beans, potatoes, and vegetable broth.
4. Stir in the salt, black pepper, and paprika.
5. Bring to a boil, then reduce heat and simmer for 30-40 minutes, until vegetables are tender.
6. Serve hot and enjoy!
