Ingredients 

Main Ingredients

  • 1 lb Brussels sprouts trimmed and halved
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another 1-2 minutes.
  4. Add Brussels sprouts and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Blend the soup until smooth using a blender or immersion blender.
  6. Stir in coconut milk, and season with salt and black pepper to taste. Simmer for another 5 minutes.
  7. Serve hot and enjoy!
