Brussels Sprouts Soup Recipe
A delicious and healthy vegan Brussels sprouts soup.

Main Ingredients
- 1 lb Brussels sprouts trimmed and halved
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 4 cups Vegetable broth
- 1 cup Coconut milk
- 1 tablespoon Olive oil
- to taste Salt
- to taste Black pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another 1-2 minutes.
Add Brussels sprouts and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Blend the soup until smooth using a blender or immersion blender.
Stir in coconut milk, and season with salt and black pepper to taste. Simmer for another 5 minutes.
Serve hot and enjoy!
