Ingredients 

Main Ingredients

  • 200 g buckwheat soba noodles
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 cup mixed vegetables (carrots, bell peppers, snap peas)
  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds for garnish

Instructions 

  1. Cook soba noodles according to package instructions. Drain and set aside.
  2. Heat sesame oil in a pan over medium heat. Add garlic and ginger, sauté for 1 minute.
  3. Add mixed vegetables and cook until tender, about 5 minutes.
  4. In a small bowl, mix soy sauce, rice vinegar, and maple syrup.
  5. Add cooked noodles and sauce to the pan. Toss to combine.
  6. Garnish with green onions and sesame seeds before serving.
