Ingredients 

Main Ingredients

  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • ½ cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Non-dairy milk such as almond or soy milk
  • 1 tablespoon Apple cider vinegar
  • ¼ cup Vegetable oil

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a baking pan.
  2. In a mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, combine the non-dairy milk and apple cider vinegar. Let it sit for a few minutes to curdle.
  4. Add the vegetable oil to the milk mixture. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared baking pan. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cornbread cool slightly before serving. Enjoy!
