Ingredients 

Main Ingredients

  • 1 medium Butternut squash peeled and cubed
  • 2 cups All-purpose flour
  • 1 teaspoon Salt
  • 1 tablespoon Olive oil
  • 10 leaves Fresh sage chopped
  • 2 cloves Garlic minced

Instructions 

  1. 1. Boil the butternut squash until tender, then mash until smooth.
  2. 2. Mix the mashed squash with flour and salt to form a dough.
  3. 3. Roll the dough into ropes and cut into gnocchi pieces.
  4. 4. Boil the gnocchi until they float, then drain.
  5. 5. In a skillet, heat olive oil and sauté garlic and sage.
  6. 6. Add the gnocchi to the skillet and toss to coat.
