Butternut Squash and Sage Gnocchi

- 1 medium Butternut squash peeled and cubed
- 2 cups All-purpose flour
- 1 teaspoon Salt
- 1 tablespoon Olive oil
- 10 leaves Fresh sage chopped
- 2 cloves Garlic minced
1. Boil the butternut squash until tender, then mash until smooth.
2. Mix the mashed squash with flour and salt to form a dough.
3. Roll the dough into ropes and cut into gnocchi pieces.
4. Boil the gnocchi until they float, then drain.
5. In a skillet, heat olive oil and sauté garlic and sage.
6. Add the gnocchi to the skillet and toss to coat.
