Butternut Squash and Sage Orzo

- 1 butternut squash peeled and cubed
- 2 tablespoon olive oil
- Salt and pepper to taste
- 1 cup orzo
- 4 cups vegetable broth
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 tablespoon fresh sage chopped
- ¼ cup nutritional yeast
Preheat oven to 400°F (200°C). Toss butternut squash with 1 tablespoon olive oil, salt, and pepper. Roast for 25-30 minutes until tender.
In a large pot, heat 1 tablespoon olive oil over medium heat. Sauté onion and garlic until translucent.
Add orzo and toast for 2 minutes. Pour in vegetable broth and bring to a boil. Reduce heat and simmer until orzo is cooked and liquid is absorbed.
Stir in roasted butternut squash, sage, and nutritional yeast. Adjust seasoning with salt and pepper.
