Ingredients

  • 1 medium Butternut Squash peeled and cubed
  • 1 can Chickpeas drained and rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until fragrant.
  2. 2. Add the butternut squash, chickpeas, and spices. Stir well.
  3. 3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20-25 minutes.
  4. 4. Use a blender to puree the soup until smooth. Adjust seasoning as needed.
