- 1 large butternut squash peeled and sliced
- 1 cup coconut milk
- 1 cup breadcrumbs
- 2 tablespoon nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- to taste salt and pepper
Preheat your oven to 375°F (190°C).
Peel and slice the butternut squash into thin rounds.
In a baking dish, layer the butternut squash slices.
Pour the coconut milk over the squash.
In a small bowl, mix the breadcrumbs, nutritional yeast, garlic powder, onion powder, salt, and pepper.
Sprinkle the breadcrumb mixture evenly over the squash.
Bake for 40 minutes, or until the top is golden and the squash is tender.
Let it cool for a few minutes before serving.
