  • 1 cup quinoa rinsed
  • 2 cups butternut squash peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups vegetable broth
  • 1 cup spinach fresh

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  4. Once quinoa is cooked, fluff with a fork and transfer to a mixing bowl. Add roasted butternut squash and fresh spinach. Toss to combine.
  5. Serve warm.
